Ingredients

1 large head Cauliflower cut into florets (about 1lb 9oz)

1/4 cup Heavy whipping cream

1 tablespoon Grass fed butter

1 teaspoon Sea salt

1/2 teaspoon Ground white pepper

4 tablespoons Cream cheese

1 stem Fresh chives diced

1 pinch Ground black pepper

Directions

1) Preheat oven to 350 degrees. 2) Place a couple inches of water in a large pot with a steamer insert/basket. Add cauliflower florets to the basket and cover. Steam for 8-10 minutes until just barely tender (cooked, but kind of firm still). Drain and spread out cauliflower florets into a large baking dish or onto a rimmed baking sheet. 3) Place baking dish / sheet into oven for about 10 minutes. The goal is to draw out excess moisture so the final product isn't too runny. 4) Using an immersion blender or food processor (you definitely need something with blades - a mixer will not work), combine cauliflower with the remainder of the ingredients until smooth. 5) Top with a dash of ground black pepper and diced fresh chives to serve.
