An excellent substitute for those living the Paleo lifestyle who are longing for the days of mashed potatoes! And for your family members...don't tell them it's not mashed potatoes and I swear they'll never guess!
1) Preheat oven to 350 degrees.
2) Place a couple inches of water in a large pot with a steamer insert/basket. Add cauliflower florets to the basket and cover. Steam for 8-10 minutes until just barely tender (cooked, but kind of firm still). Drain and spread out cauliflower florets into a large baking dish or onto a rimmed baking sheet.
3) Place baking dish / sheet into oven for about 10 minutes. The goal is to draw out excess moisture so the final product isn't too runny.
4) Using an immersion blender or food processor (you definitely need something with blades - a mixer will not work), combine cauliflower with the remainder of the ingredients until smooth.
5) Top with a dash of ground black pepper and diced fresh chives to serve.
Read the preparation instructions first to make sure you have the tools you need...especially an immersion blender or food processor! This recipe won't work with just a regular mixer!
Yes, the cauliflower is steamed THEN baked. The baking an important step to pull out some of the excess moisture which would otherwise prevent your cauliflower mash from resembling mashed potatoes!
