Creamy Chicken Soup

Ingredients

1 lb Chicken cooked, shredded

4 cups Chicken broth 1 box

2 tsp Oil

1/2 cup Onion diced fine

1 cup Carrot diced fine

1/2 cup cup Celery diced fine

2 cloves Garlic minced

1 1/2 cups Cheddar cheese shredded

1 cup cream chesse

1/2 cup heavy cream

1/2 tsp salt and pepper

2 cups small pasta uncooked

2 cups frozen spinach chopped

1/2 cup Parmesan for garnish


Directions

In a dutch oven saute carrots, onions and celery in oil. Add chicken and cook for 3 minutes until warm. Stir in cream cheese making sure everything is coated. Add chicken broth and cream. Bring to a boil, cover and cook for 15 minutes. Add pasta and cheddar. Simmer until pasta is cooked. Stir in spinach and cook another 5 to 10 minutes. Garnish with parmesan cheese. Soup will be very thick.
