Suggest a better descriptionIn a dutch oven saute carrots, onions and celery in oil. Add chicken and cook for 3 minutes until warm. Stir in cream cheese making sure everything is coated. Add chicken broth and cream. Bring to a boil, cover and cook for 15 minutes. Add pasta and cheddar. Simmer until pasta is cooked. Stir in spinach and cook another 5 to 10 minutes. Garnish with parmesan cheese. Soup will be very thick.
