Creamy Corn Chowder - Vegan

Ingredients

1 cup brown rice dry

2 oz black rice dry (optional)

1 vegetable boullion cube

2 bay leaves

4 cups water

1 onion, chopped fine or puréed

16 oz frozen yellow corn thawed

15 oz can white corn with liquid

1 tsp salt

1 tsp black pepper

2 tsp dried Rosemary leaves

2 tsp dried thyme leaves


Directions

Place rice, water, boullion, bay leaves, and water in pan. Cover and bring to a boil. Lower heat to a simmer for 45 minutes until rice is cooked (black rice will burst). Add onion, salt and pepper at 30 minutes. After rice is ready, add corn and seasonings. Allow to simmer for 10 minutes and serve.
