Creamy Mushroom Soup

Ingredients

1 Onion finely chopped

3 Garlic Cloves finely chopped

2 large sprigs Tarragon Leaves finely chopped

700 gms Mushrooms finely diced

750 ml Beef Stock mixed with Veg Stock

1 large Potato diced


Directions

Fry onions until translucent. Add garlic, tarragon an mushrooms and fry until liquid is released. Add diced potato and stock with required seasoning. Simmer for 15 mins. Blitz. To dress up - mix crème fraiche with chopped tarragon and plenty of seasoning. Add dollop to each dish with a sprig of tarragon.
