Creamy tomato and salami fettucine

Ingredients

1/2 onion

1 clove garlic

small bunch parsley or coriander

1/2 red capsicum

100 g zucchini

30 -50g oil

400 g Roma tomatoes quartered

300 g water

200 g cream

1 tbsp TM veg stock concentrate

25 -300g fettuccine snapped in half

100 g salami thinly sliced


Directions

Place onion, garlic and parsley into TM bowl and chop for 5 seconds on Speed 7. Add capsicum and zucchini and chop for 3 seconds on speed 5. Add the oil and saute for 1 -2 mins at 100 on speed 1 Add the tomatoes, water, cream and stock and cook for 10 miutes at 100 on speed 1. Add fettuccini using the spatula to assist in the incorporation of the fettuccini into the liquid. Add the salami and cook for 7-10 minutes at 100 on Reverse + speed soft. Pour the fettuccine into a serving bowl and sprinkle with extra parsley and parmesan cheese if desired.
