Crispy Herbed Catfish

This recipe is from the Quaker corn meal canister, and it is my favorite way to fix catfish. It has all the crispy tastiness of deep-fried, but with a fraction of the oil. Just want to make sure everyone has a chance to try it!

Ingredients

1/2 cup Cornmeal

1/4 cup All purpose flour

2 tablespoons Parmesan cheese Grated

1 1/2 teaspoons Italian seasoning

1/4 teaspoon Garlic salt Optional

1/4 teaspoon Black pepper

1 1/2 pounds Catfish

1/2 cup Skim milk

3 tablespoons Butter Melted


Directions

Heat oven to broil. Combine dry ingredients. Dip fish into milk; coat with cornmeal mixture. Brush with melted butter. Place fillets on broiler rack. Broil 5 inches from heat 5 to 8 minutes or until fish flakes easily and turns golden brown.
