Crock Pot Creamy Chicken Tortilla Soup

1 1/2 lbs boneless skinless chicken thighs

2 quarts chicken stock

2 14.5 oz cans black beans drained and rinsed

1 jalapeno, seeded and minced

1 14.5 oz can crushed tomatoes {the fire roasted kind if you can

1 4 oz can diced green chilies

1 yellow onion chopped

3 cloves garlic minced

2 bay leaves

1 tbsp cumin

2 tsp chili powder

1 tbsp oregano

1 cup frozen corn

4 corn tortillas torn into small pieces

heaping 1/2 cup sour cream

1 tsp salt – to taste

black pepper – to taste

sliced avocado for serving

shredded cheddar or monterey jack for serving

fresh minced cilantro for serving
