Cream shortening with sugars until fluffy. Add egg, milk and vanilla and beat well. Sift together dry ingredients, add ti creamed mixture mix well. Chill at least one hour.
Date filling. In a saucepan, combine chopped dates, sugar and water. Bring to boiling, cover. Simmer about 5 mins, stirring occasionally. Add lemon juice and 1/4 t salt. Cool. Any filling left over after baking the cookies can be used as jam on toast.
On floured surface, roll half the dough at a time to a little less than 1/8 inch. Cit with 2 1/2 in round cookie cutter. With a thimble cut a small circle in the center of half the cookies. Place 1 T filling on each plain cookie. Top with a cutout cookie, press edges with tip of inverted tsp to seal. Bake on ungreased cookie sheet at 375 for about 10-12 minutes. Makes 3 dozen.
