Denise's Tex Mex Omelette

Ingredients

8 Eggs (Whisked In a Bowl 2 Eggs at a time)

1 tablespoon Extra Virgin Olive Oil

0.25 Green Pepper (Small Dice)

3 tablespoons Red Onion Minced

2 cloves Garlic Minced

4 Tomato Thick Slices

2 tablespoons Black Olives Sliced

4 tablespoons Black Beans

4 tablespoons Canned Corn

2 tablespoons Sour Cream

2 slices Monterrey Jack Cheese

1 tablespoon Fresh Minced Cilantro

0.5 teaspoon Cayenne Pepper

1 teaspoon Garlic Powder

1 salt and pepper to taste


Directions

In a small sauce pan on Medium heat add EVOO, Onions, and Garlic. Saute until the onions are translucent. Add Green Pepper, Cilantro Salt, Pepper, Cayenne Pepper, Garlic Powder, Beans, and Corn. (You can also add large diced tomatoes if you like.) Cook for 5-7 Minutes. Whisk 2 eggs together at a time and make on Omlette with one slice of cheese inside it. Fold Over. Cover Omlette with the tomato slices then bean mixture, sour cream, and black Olives.

Really yummy. A little spicier than my diners were used to, so don't forget the sour cream!
