Denver Chocolate pudding

Ingredients

2 ounces Chocolate squares

1 1/3 cups Sugar

1 cup All purpose flour sifted

1 1/2 teaspoons Baking Powder

1/2 cup Margarine

1/2 teaspoon Salt

1/2 cup milk

2 teaspoons Vanilla

1/2 cup Brown sugar

3 tblspoons Cocoa

1 1/2 cups Water boiling


Directions

Preheat oven to 350F. Grease one 9 inch pan or casserole dish. Melt grated chocolate in a heat proof bowl or in the top of a double boiler over simmering water. Combine margerine and half of the granulated sugar in a bowl. Whip with beater until frothy. Sift together flour, baking powder and salt and add to sugar mixture and add milk. Mix with mixer on low speed until well mixed. Fold in melted chocolate and 1 tsp of vanilla. Spread smoothly in the greased dish. In the same bowl, mix together remaining sugar, brown sugar and cocoa. Sprinkle over the batter, Add remaining teaspoon of vanilla to the boiling water and carefully pour over the batter and powdered mixture. Bake for aproximately one hour until the top of the pudding is firm. Let cool slightly before cutting. Makes eight servings and spoon remaining sauce which forms beneath the cake onto each piece.

My kids are wild for this pudding and I've made it a few times over. It's delightful with sauteed bananas too. Thank you for posting this dish, it is enjoyed at our home a lot!
