In a large Dutch oven with a heavy lid layer ingredients in this order: Half of the potatoes, salt and pepper, half the onions, half the parsley, all of the sausages, remaining potatoes, salt and pepper, remaining onions, remaining parsley.
Mix vegetable broth and liquid smoke and pour over ingredients in pot. Bring to a boil, reduce heat, cover and simmer for approx 1 hour. Add beer and simmer for 15 min more.
