Ingredients

3 tablespoons whole Cumin seeds

4 tablespoons whole Fennel seeds

4 tablespoons whole Corriander Seeds

4 tablespoons whole Black Peppercorns

2 tablespoons whole Star Anise

2 whole Chiles

2 tablespoons Cardamon Seeds (little black seeds inside green pods)

1 2 inch piece of Cinnamon


Directions

Preheat oven to 350* Place all ingredients into an oven safe pan or baking sheet, and set into oven to roast for 5-8 minutes. As long as nothing burns we are good.... use your best judgement but spices should be very fragrant and robust. ***Alternatively, roast each seperatly, adding together at the end! Allow to cool, 15 mins, then use a spice grinder, coffee grinder or mortor and pestle to grind up. double or triple the recipe for a longer lasting amount. Should keep well up to 3 months in an airtight container!
