Easy Thai Coconut Chicken

Ingredients

1 can Coconut milk

1 tablespoon Green curry paste

1 tablespoon Coconut oil

Chicken breast

1/2 cup Carrots sliced

1 cup Onion

2 cloves Garlic

1/2 cup sliced mushrooms


Directions

1. Combine curry paste and coconut milk in small bowl. 2. Cube chicken and cook in coconut oil in skillet. 3. Add veggies and cook for another five minutes. Once veggies are golden, add coconut milk mixture.
