Ingredients

1/2 cup conion chopped

4 ounces low fat cream cheese softened

1 tablespoon water

1 teaspoon ground cumin

1/4 teaspoon black pepper

1/8 teaspoon salt

4 cups chicken cooked and shredded

1 can cream of chicken soup

1 8 ounce Light sour cream

1 cup skim milk

1 can mild green chiles

1/2 cup sharp cheddar cheese shredded

10 flour tortillas

1/4 cup green pepper chopped (optional)

1/4 cup tomatoes chopped (optional)


Directions

Preheat oven to 350 degrees. For filling: Cook onion and green pepper (optional) until tender. In medium bowl, combine cream cheese, water, cumin, pepper, salt. Stir in cooked onion and chicken. Spray 9x13 inch baking dish. Spoon 1/4 cup filling into each tortilla and roll. Place in pan seam side down. For sauce: Mix soup, sour cream, milk and chiles. Pour over enchiladas. Cover and bake for 40 minutes. Sprinke with cheese and bake 5 more minutes. Top with tomatoes if desired.
