Excellent Good for You Salad

Ingredients

1-2 can good quality tuna packed in oil opened, drained, and flaked

4 medium Roma tomatoes seeded and chopped

12+ baby boiled baby yukon gold or red potatoes cut to bite size, if necessary

1 cup lightly cooked green beans trimmed and cut in half

8 olive-cured black olives seeded and roughly chopped

1 stalk celery cut into moons

1 small bunch fresh parsley chopped

8 leaves romaine lettuce torn into bite sized pieces

1 forkful Dijon mustard

salt & fresh cracked pepper to taste

1/4 cup Balsamic Vinegar

1/2 cup Extra virgin olive oil


Directions

SALAD Layer salad ingredients in a large bowl. Pour dressing over the salad and gently mix to coat. Serve with fresh bread. DRESSING Mix dijon mustard with salt and pepper then gently whip in balsamic vinegar. Slowly drizzle olive oil into balsamic base, whisking all the time. Oil should blend into the vinegar to make a light brown dressing.
