Layer salad ingredients in a large bowl. Pour dressing over the salad and gently mix to coat. Serve with fresh bread.
DRESSING
Mix dijon mustard with salt and pepper then gently whip in balsamic vinegar. Slowly drizzle olive oil into balsamic base, whisking all the time. Oil should blend into the vinegar to make a light brown dressing.
Be sure your potatoes are cooked, boiling in well salted water until fork tender is ideal. The green beans should also be cooked, but lightly, they should still have bite and be bright green. You can load in even more veggies, but you might need more dressing.
If dressing breaks (i.e. you can see the olive oil) you are pouring in the oil too fast or are not whisking fast enough.
