Heat the oil in a medium sized frying pan, add the sliced onion and saute for 5-10 minutes until soft and golden. Add the sugar, stir to combine and cook for a further 5 minutes. Remove from the pan and allow to cool. Lay the rocket on a large serving plate, top with Ficele and crumbled Roquefort cheese, finish with the caramelised onions. Notes Serve with chunks of French bread. NOTES : A platter suitable to serve at a dinner party.
