Fiesta Rice

Ingredients

2 1/2 c Cooked brown rice

1 ds Paprika

Nonstick vegetable cooking

1/2 c Skim; or 1% milk

1 lg Tomato; peeled and diced

3/4 c Low-fat cottage cheese

1 2 ounces jar pimentos;

1 c Grated reduced-fat cheddar


Directions

Preheat oven to 350 degrees. Combine 1/2 cup of cheddar cheese and all other ingredients except paprika. Stir until well mixed. Spray casserole with vegetable spray. Pour in mixture; top with remaining cheddar cheese and sprinkle well with paprika. Bake 25 to 30 minutes.
