Fish Cakes

Ingredients

1 tb Onion, finely chopped

1 1/2 c Mashed Potatoes

Salt and pepper to taste

1 ts Prepared mustard

1 Egg beaten

1 lb Haldock

Lemon juice


Directions

For every cup of haldock, add mashed potatoes, mustard, salt and pepper, onions and a little lemon juice. Mix all with a little beaten egg and form into cakes. Dip in remaining egg and coat with crumbs. Refrigerate uncovered until firm, then fry or bake. Source: "The Yankee Kitchen" 03-24-93 (#3) [Meg]
