Frenchish Meatballs

Ingredients

1 1/2 pounds Hamburger 85-90%

2 cloves Garlic smashed

2 teaspoons Fresh Thyme Just the leaves

1/2 cup Panko breadcrumbs

2 ounces Gruyere Shreaded

1/2 cup Whole milk

1 each Egg

2 teaspoons Worcestershire sauce

1 1/4 teaspoons Kosher Salt

1/4 teaspoon Black pepper Finely ground

2 pounds Sweet onion Cut thin Julian

2 tablespoon Unsalted butter

1 teaspoon Fresh Thyme Just the leaves

2 tablespoons Flour

1/2 cup Dry white wine

14 1/2 ounces Beef broth

1 teaspoon Balsamic Vinegar

1 1/4 teaspoon Kosher Salt

1/2 teaspoon Black pepper Finely ground

2 teaspoons Beef paste

6 ounces Gruyere Shreaded


Directions

Preheat the oven to 400 with a rack in the middle of the oven. Mix up all the meatball ingredients. Bake them off till the centers are 165 degrees, about 15 to 20 minutes. Sweat the onions in the butter along with the thyme, salt, and pepper till golden and sweet (20-40 min). Once the onions are golden brown put the flour and stir till it starts sticking on the pan (1ish min). Pour in the wine and scrape the fond. Cook till about dry and then add the beef broth. Bring till it thickens. Add the balsamic vinegar and beef paste, stir. Add salt and pepper to taste. Add the meatballs and sauce, sprinkle the 6 ounces of cheese and throw under the broiler for a few minutes and serve!!!
