Oniony beefy cheesy yumminess

Preheat the oven to 400 with a rack in the middle of the oven.
Mix up all the meatball ingredients. Bake them off till the centers are 165 degrees, about 15 to 20 minutes.
Sweat the onions in the butter along with the thyme, salt, and pepper till golden and sweet (20-40 min).
Once the onions are golden brown put the flour and stir till it starts sticking on the pan (1ish min). Pour in the wine and scrape the fond. Cook till about dry and then add the beef broth. Bring till it thickens. Add the balsamic vinegar and beef paste, stir. Add salt and pepper to taste.
Add the meatballs and sauce, sprinkle the 6 ounces of cheese and throw under the broiler for a few minutes and serve!!!
Serve with a light salad and crusty bread, or as an appetizer
