Fresh Spinach Artichoke Dip

A creamy hot dip made with fresh spinach and Costco artichoke hearts, perfect for dipping tortilla chips.

Ingredients

2 cups artichoke hearts Costco Kirkland brand

8 bag of packaged fresh spinach

2 tbsp minced garlic

1 cup water

8 oz cream cheese whipped is easiest to mix

1 cup Parmesan cheese grated

1/2 cup mozzarella cheese grated

1 tsp chili powder or Sriracha Hot Sauce

1/2 tsp garlic salt

1 tbsp garlic powder

1/2 teaspoon Black pepper ground

lemon juice


Directions

Rinse spinach. Drain artichoke hearts out of the flavored oil. Chop spinach and artichoke hearts. (Artichoke hearts should be chopped into small enough chunks to pick up with a chip.) Boil spinach, artichokes, minced garlic, and 1 cup of water in a large saucepan over medium heat until tender, about 5-10 minutes. Stay near the stove to check the tenderness of the spinach and artichoke hearts. Drain water. If you didn't get whipped cream cheese, then heat it in a small bowl in the microwave set on high for a few minutes, checking each minute. Add the spinach, artichoke hearts, all three cheeses, and seasonings to a microwaveable mixing bowl. Be sure to season to your own taste. You can't go wrong with salt, pepper, garlic powder, garlic salt, chili powder, or Srirachi hot sauce. Once it's all mixed together, heat in the microwave set on high for a few minutes, stirring & checking consistency each minute. Best served hot with crackers, your favorite chips, or warm bread.
