Frosted Banana Bars

Ingredients

2 c All-purpose flour

2 ts Vanilla

1 1/2 c bananas ripe, Mashed

3 Eggs

1/2 c Butter or margarine; soften

2 c Sugar

12 ts Salt

1 ts Baking soda

4 c Confectioner's Sugar

1 ts Vanilla extract

1/2 c Butter or margarine

1 8-oz pk Cream Cheese


Directions

For bars, in a mixing bowl, cream butter and sugar. Beat in eggs, bananas and vanilla. Combine the flour, baking soda and salt; add to creamed mixture and mix well. Pour into a greased 15x10x1" baking pan. Bake at 350 degrees for 25 minutes or until bars test done. Cool. For frosting, cream butter and cream cheese in a mixing bowl. Had to add some milk to batter, about 1/4 cup. Ends were very dense, dry. Rest of cake was ok. Think if I added more bananas and milk it would have come out better, or even a box of pudding.

Very good! Since I am a diabetic, I used wheat flour and splenda instead of white flour and sugar and added 1/4 cups chopped walnuts. I also only used 2 cups of confectionary sugar in frosting instead of 4. It was still plenty sweet.

Yummy! I added a little milk to the frosting recipe. This was really good!
