Garlicky Pork With Basil ( 3 Points)

Ingredients

3/4 pound lean pork tenderloin

1 teaspoon Vegetable oil

1/4 cup Chicken broth

1/4 cup fresh basil chopped

1 tablespoon OR dried basil leaves 1 tablespoon plus 1 teaspoon

1/8 teaspoon ground red pepper cayenne

4 cloves Garlic crushed


Directions

Trim fat from pork if necessary. Cut pork crosswise into 8 pieces. Flatteneach piece to 1/4-inch thickness between waxed paper or plastic wrap. Heatoil in 10-inch nonstick skillet over medium-high heat. Cook pork in oilabout 3 minutes, turning once, until brown. Stir in remaining ingredients.Heat to boiling; reduce heat. Cover and simmer about 5 minutes or untilporkis no longer pink in center.
