Garlicky Shrimp Scampi

Ingredients

1 tablespoon olive oil

1 pound shrimp Large, peeled, deveined, and butterflied

3 cloves garlic

1/4 teaspoon Freshly ground pepper

1/4 teaspoon salt

1/2 cup Dry white wine

1/2 cup Chicken broth

3 ea Scallions sliced

2 tablespoon Fresh parsley chopped

2 tablespoons Fresh lemon juice

1/3 cup Bread crumbs


Directions

1. Preheat the broiler 2. Heat the oil in a large nonstick skillet with an ovenproof handle over medium-high heat. Add the shrimp, garlic, salt, and pepper; cook, stirring frequently, just until the shrimp begin to turn pink, about 3 minutes. Add the wine, broth, scallions, parsley, and lemon juice; bring to a boil. Reduce the heat and simmer, uncovered, until the liquid begins to thicken slightly and the shrimp are just opaque in the center, about 3 minutes. 3. Top the shrimp mixture with the bread crumbs. Place the skillet under the broiler and broil 5 inches from the heat until the topping is golden, about 2 minutes.
