GFCF Pumpkin Cupcakes

Awesome, moist GFCF cupcakes/muffins/cake :) Recipe modified from Real Simple Magazine March 2011,

Ingredients

1/2 Cup CF Margarine

1 Cup Brown Sugar

2 lrg Eggs

1 Cup Canned Pumpkin

1 Tbsp Vanilla Extract

1.5 Cups GF Flour Mix Pamela's Bread Mix, Bob's Red Mill

2 tsp Baking Powder

1/2 tsp Baking Soda

1/2 tsp Cinnamon

1/4 tsp Ground Cloves

1/4 tsp Ground Nutmeg

1/4 tsp Salt

1/4 Cup Hemp Milk or other CF milk


Directions

Preheat Oven to 350F. Line muffin cups with paper. Mix dry ingredients separately. Blend margarine & sugar. Add pumpkin & Vanilla. Add half of dry ingredients to pumpkin mixture. Add milk. Add remaining dry ingredients. Bake 20mins or until done.
