Ginger Snaps

Ingredients

2 cups sugar

1 1/2 cups canola oil

2 large eggs

1/2 cup molasses

4 cups flour

4 tsp baking soda

3 tsp ground ginger

2 tsp ground cinnamon

1 tsp salt

2 packages (10-12 oz) white baking chips

1/4 cup shortening


Directions

1) Preheat oven to 350 2) In a large bowl, combine sugar and oil 3) Beat in eggs 4) Stir in molasses 5) Combine flour, baking soda, ginger, cinnamon, and salt 6) Gradually add to creamed mixture and mix well 7) Shape into 3/4 inch ball and roll in sugar 8) Place 2 inches apart on ungreased cooking sheet 9) Bake for 10-12 minutes 10) In microwave, melt the baking chips and shortening 11) Stir until smooth 12) Dip cookies halfway into melted chips, place on waxed paper to cool
