Gluten Free Muffins or Coffeecake

Ingredients

1 cup rice flour

1 cup Pamela's Gluten Free Baking Mix

1/2 cup sugar

1 Tbls baking powder

1/2 Tsp Salt

1/2 cup milk (any kind, soy is okay)

1/2 cup Applesauce

1/2 cup Canola Oil


Directions

Heat oven to 350 Bake in greased pan or use cupcake papers Mix dry ingredients together in larger bowl. Next mix all wet ingredients in a separate bowl. Stir wet into the dry until blended Add fruit, nuts, etc. of your choice here are some suggestions: - Streusel (1 cup G.F. Flour, 1/2 cup butter, 3/4 brown sugar, dash nutmeg - pulse until blended) - 2 Bananas mashed plus nutmeg - 1 cup blueberries plus cinnamon - 1/4 cup poppy seeds, 2 tbls almond extract, 3/4 c slivered almonds - 1 cup chopped apples or pears plus cinnamon - 1 cup canned pumpkin plus pumpkin pie spice Really add any combo that sounds good. This can be done as muffins or as a coffee cake
