Goat Cheese and Sun-Dried Tomato Chicken

Ingredients

6 boneless chicken breasts

1 cup Goat Cheese

1 tsp dried Italian herbs can add more if preferred

1 tsp Fresh Italian parsley chopped

1/2 - 1 cup Sun-dried tomatoes packed in oil, drained

1 cup light cream

4 garlic cloves minced

4 tbs olive oil

Salt and pepper


Directions

In a bowl, combine goat cheese, herbs, parsley, salt and pepper. Make slit down side of chicken breasts to create a pocket and spoon a layer of goat cheese mixture inside each pocket. Season chicken breasts on both sides with salt and pepper. Using a saute pan over medium - high heat, layer bottom with olive oil and place chicken breasts facing up until browned. Turn over and brown the other side, heating until fully cooked. Remove breasts. Using the same pan, add garlic, sun-dried tomatoes and cream. Bring to a boil then simmer for 5 minutes. Spoon sauce over chicken and enjoy!
