Grammys Zucchini Cake

Ingredients

3 eggs

1 3/4 cup sugar

1 cup oil

1 tbsp vanilla

2 cups grated zucchini

2 cups flour

1 tbsp cinnamon

2 tsp baking soda

1/4 tsp baking powder

Directions

- Preheat oven to 350 - beat eggs till frothy - beat sugar into eggs - add oil and vanilla and beat till thick and lemon colored - mix in zucchini - in separate bowl mix in dry ingredients /flour cinnamon etc) - add dry mix to wet and combine - pour into 9x12 cake pan, bake 350 for 45 minutes *or* - pour into 2 8x3 loaf pans, bake 350 for 1 hour
