- beat eggs till frothy
- beat sugar into eggs
- add oil and vanilla and beat till thick and lemon colored
- mix in zucchini
- in separate bowl mix in dry ingredients /flour cinnamon etc)
- add dry mix to wet and combine
- pour into 9x12 cake pan, bake 350 for 45 minutes

- pour into 2 8x3 loaf pans, bake 350 for 1 hour
