Greek Salad - Raw Food Diet

Ok, most Greek Salads are raw but this is one of my staples!

Ingredients

1/3 cucumber diced

1/3 yellow or red bell pepper diced

1 medium tomato or 2 roma tomatoes diced

1 slice of red onion diced

0.5 cup extra virgin olive oil

0.5 cup apple cider vinegar (preferably Bragg's)

1 pinch Himalayan sea salt

1 pinch Black Pepper ground


Directions

Combine all the vegetables, and put in serving bowl. Combine olive oil and vinegar in a 1:1 ratio, add salt and pepper, and shake. Drizzle about 2 tablespoonfuls of dressing over vegetables and let sit 5-10 minutes to marinate a bit.

I find the yellow peppers more visually appealing. Depending on your views on raw food, you can add an ounce or two of raw feta. [I posted this recipe.]
