Ingredients

2 Lbs Onions Diced

2 Lbs Carrots Diced

2 Lbs Celery Diced

2 Ea Jalapenos Dice

2 Ea Roma Tomatoes

6 Tbsp Garlic Chopped

15-20 Ea Tomatillos whole

3 Cups Green Chili Or half a bag frozen

.25 Cup Cilantro

1/4 Cup Cumin

2 Tbsp Coriander

1 Tbsp Paprika

1 Tbsp Chili powder

3 Tbs Mexican oregano

2 Tbs Salt

3 Tbs Pepper

1/2 Cup Chimichuri

.5 Tbsp Cracked red Pepper

4 Quarts Water

6 Tbsp Veg Paste


Directions

Sweat all the firm veggies until translucent. Then add tomatoes and tomatillos. Then add all other ingredients and simmer for one hour. Then blend thoroughly with the hand blender should be thick and no discernible ingredients. Cool with ice wand. Store in reach in cooler on the right hand bottom shelf.
