Sift the flour, sugar, baking powder, and salt together into a large bowl. Add the egg yolk, melted butter, and milk and beat until the batter is thoroughly combined. In a separate bowl, whisk the egg white until it holds stiff peaks, then gently fold it into the batter. Let the batter stand for 10 minutes; do not stir again. Place a large ungreased griddle over medium heat. When the griddle is hot, ladle about 1/4 cupfuls of batter onto the griddle to make 4 inch cakes. Cook until browned on the bottom, about 2 minutes, then turn and cook until the other side is browned, about 1 1/2 minutes.
