Ham Steak with Mashed Sweet Potatoes and Italian Greenbeans

This is an easy dinner to make after a busy day, that can go from family to company without a hitch. Oh, and ah, save the bone for me!

Ingredients

1 Ham Steak Bone In

1 teaspoon Whole grain mustard

2 tablespoons Sour cherry preserves no pits

1 teaspoon Black coffee

2 Sweet potatoes

2 tablespoons Butter

1/4 teaspoon Cinnamon

1/4 cup Milk

1 tablespoon Brown sugar

1 cup Frozen italian greenbeans

1 tablespoon Sun-dried tomatoes


Directions

Mix the mustard, sour cherry preserves and coffee together. Set aside. Peel the sweet potatoes and cut up into large pieces. Put into pan and cover with water. Heat over high heat until they are almost fork tender. Put the green beans into a steamer over the potatoes. Put the ham into a separate pan over medium heat. Heat for a few minutes, then turn on other side and heat a few minutes more. Put sauce on ham, cover and lower heat. Watch carefully, as it might burn. Remove the beans from the heat, do not remove from the steamer. Drain the potatoes and mash with butter, milk, cinnamon and brown sugar. Add tomatoes to green beans and toss. Cut ham steak in two, plate with potatoes and beans. Pour glaze in ham pan over ham and serve.
