Handy Homemade Mix - Cobbler Mix

This is a great cobbler mix recipe to make ahead and have on hand so you can quickly mix up a cobbler with very little prep time.

Ingredients

COBBLER MIX

4 1/2 cups flour

2 1/2 cups sugar

3/4 cup buttermilk powder blend

3 tablespoons baking powder

2 teaspoons salt

COBBLER RECIPE 1

1/2 cup butter melted

21 ounces canned cherry pie filling or other variety

1/2 cup water

2 cups cobbler mix

COBBLER RECIPE 2

1/2 cup butter melted

2 cups fresh fruit or berries

3/4 cup sugar

1/4 cup pie filling enhancer

1/2 cup water

2 cups cobbler mix


Directions

FOR COBBLER MIX: In a large bowl, combine all ingredients (flour, sugar, buttermilk blend powder, baking powder and salt). Store in an airtight container in a cool, dry place for up to 6 months. This amount of cobbler mix will make about 4 batches of cobbler as detailed below. FOR COBBLER: Pour butter in a 9" X 9" baking dish. Top with pie filling listed in recipe #1 or fresh fruit listed in recipe #2 (In place of the pie filling enhancer which can only be purchased on-line from King Arthur, you can add a little MINUTE TAPIOCA or cornstarch along with 3/4 cup sugar). In a bowl combine 2 cups of the cobbler mix and water; stir to combine. Drop by rounded tablespoonfuls over the filling; spread gently. Bake 350 degrees for 35-40 minutes or until topping is golden (don't forget to reduce temp by 25 degrees if using a glass baking dish).
