Ingredients

6 large Russet potatoes shred in food processor, squeeze all water out in towel

Olive oil

Salt and pepper to taste


Directions

In a bowl generously salt & pepper the potatoes & ensure spices are mixed throughout. Heat olive oil in cast iron skillet over medium high heat. Place half of the potatoes in the pan. Cook until golden brown on both sides, approximately 5-10 min per side. Repeat for remaining potatoes.
