Heat oven to 425 degrees. Lay out hashbrown patties on a cookie sheet. Bake for 10 minutes on each side, or until crispy. Scramble eggs. Take out try of crispy hashbrowns from the oven and place 1/4 cup packed scrambled egg mound on the center of each hashbrown. Sprinkle crumbled bacon on top of eggs. Sprinkle grated cheese on top of bacon. Return the tray to the oven for 5 more minutes, until cheese is melted. Serve warm with fruit.
