Ingredients

400-500 grams pumpkin peeled and chopped into bite sizes

400-500 grams Boniatos Sweet Potatos

1 clove garlic chopped

2-3 teaspoons ginger paste (NOT Mocca spoons)

2 tin full fat coconut milk 400ml = 1 tin

1 pack 75g taquitos big chunks

1/2 cup peas

1 red pepper sliced into thin bite sized pieces

1 veggieterning crumbled

1 tablespoon Oil

1 pack Mercadona weinerbrød

Nutmeg powder


Directions

Heat oil, veggieterning, garlic and ginger paste in saucepan on high'ish (9 in Higluns Hus) Once 'melted', svits pumkpin & boniato chunks in the spice mix When pumpkims and boniatos are svits'ed, add 2 x coconut milk Turn heat down (5 in Higluns Hus), and let simmer for about 20-30 mins When pumpkins are soft, blitz them with the stavblender Halve soup portion into a separate container Add sliced red peppers, peas and taquitos into remaining soup Leave to simmer for another 5 minutes, or until red peppers are soft REMEMBER to add a little nutmeg to the soup and serve with Mercadona weinerbrød
