Healthy banana bread

A tried and true banana bread recipe that I altered to make a little healthier. My kids and my husband (who is not a banana bread fan) love it!

Ingredients

3 ripe bananas mashed

1/3 cup melted butter

1/2 cup granulated sugar

1/2 cup brown sugar

1 egg beaten

1 tsp vanilla extract

1/3 cup rolled oats

1 tsp baking soda

1 pinch salt

1 cup flour

1/2 cup spelt flour

1/3 cup plain yogurt or sour cream


Directions

No need for mixer in this recipe. Preheat the oven to 350F. With a wooden spoon, mix butter into the mashed bananas in a large missing bowl. Mix in the sugars, egg, vanilla, oats, and yogurt/sour cream. Sprinkle bakin soda and salt over the mixture and mix in. Add the flours last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hr. Check for doneness. Cool on rack. Remove fr.o.m. Pan and slice to serve.

I substitute some ingredients for a healthier bread, but I do the recipe almost every week for a good to go breakfast when going to work.

Best banana bread I have made. It smaller but very nourrishing. I add nuts and other fruits as well. I also cut sugar by more than half.
