1 pound lean ground turkey breast

1 medium onion diced

3-4 cloves garlic minced

Salt and pepper to taste

2 tablespoons chili powder

2 teaspoons cumin

1 teaspoon paprika

3 small sweet potatoes peeled, diced small

1.5 cups water

3-4 cups low-sodium chicken broth

1 , 28-ounce can unsalted crushed tomatoes with basil

1 , 15-ounce can low-sodium black beans

2 cups cooked quinoa

Optional toppings: reduced fat mexican-blend chees plain greek yogurt, chipotle hot sauce, salsa, avocado and cilantro
