Holiday Cranberry Relish

This is the prized recipe of a coworker of my husband. It took some convincing, but she finally parted with the recipe. Husband adores this relish during the holidays.

Ingredients

1 package fresh cranberries

1 cup Sugar

1 cup Water

1/2 small pkg Cherry jello

1 20-oz can crushed pineapple drained

1/3 cup orange peel (1-2 oranges), grated

1 cinnamon cinnamon stick

3 oz. brandy optional

1 oz. sweet vermouth optional

Directions

Combine cranberries, sugar and water. Bring to a boil; reduce heat and cook for 10 minutes. Cool. You can also cook cranberries in Microwave-safe bowl if you prefer. Cool berries before adding other ingredients. Add remaining ingredients. Chill overnight. You can substitute an orange flavored liqueur such as grand marnier or triple sec. You can also substitute with 1/2 cup orange juice if you don't want to use liquor. I prefer it without liquor myself, although it's delicious both ways. It really tastes better if you make this a couple of days ahead of time. I usually double the recipe, since my husband seems to enjoy this so much. It doesn't last long.

This tastes great on everything. Eat alongside any dessert, and eat with everything in your holiday plate. I use 1/2 orange juice 1/2 triple sec, 3oz. brandy and no vermouth. I add 1/2 teaspoon cinnamon and a little nutmeg, and no cinnamon stick. I top with chopped walnuts in the serving dish.
