Honey Jalapeno Chicken with Sesame Soba Noodles

This is quick and easy recipe that uses the leftover meat from a roasted (or purchased rotisserie) chicken. The flavors are so different than my usual weeknight fare, but my whole family loves it (including my non-adventurous husband and finicky toddlers).

Ingredients

1 8 to 12 oz package Soba noodles

1 jalapeño pepper seeds removed

1/3 cup honey

1/4 cup fresh cilantro

1/2 teaspoon salt and pepper

2 tablespoons Water

2 teaspoons olive oil

1/2 cup carrots matchstick cut, or (or prepackaged shredded carrots)

1 cup cabbage shredded

1 whole chicken (i.e. rotisserie chicken)

3 tablespoons Soy sauce

2 teaspoons sesame oil

1/4 cup green onions chopped

2 tablespoons pickled ginger minced


Directions

Cook noodles. In food processor, combine jalapeno, honey, cilantro, salt and pepper. Puree until smooth. Add water until desired consistency achieved. In large skillet, saute veggies in olive oil. Add chicken and blended sauce. Cook until heated through. In large bowl, combine noodles, soy sauce, sesame oil, scallions and pickled ginger. Toss with chicken and sauce.
