Hummingbird Cake

Bananas and pineapple make this a moist, yummy cake.

Ingredients

3 cups flour

2 cups sugar

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon cinnamon

3 Eggs beaten

1 1/2 cups oil

1 1/2 teaspoons vanilla

1 8 oz. can crushed pineapple undrained

1 cup pecans or walnuts broken

2 cups bananas chopped

1 8 oz. pkg. cream cheese softened

1/2 cup margarine or butter softened

1 bag powdered sugar

1 teaspoon vanilla


Directions

1. Combine dry ingredients. 2. Add eggs and oil. 3. Stir until moist. 4. Do not beat. 5. Stir in vanilla, pineapple, nuts and bananas. 6. Grease and flour three cake pans. 7. Spoon batter into pans. 8. Bake at 350 degrees for 25-30 minutes. 9. Cool layers and frost. Frosting Beat Cream cheese, butter, powdered sugar and vanilla. Beat until smooth.
