Ingredients

1 pound Beef thinly shaved strips

1 pound Pork (tenderloin best) cubed or shaved

2 pounds Chicken cubed

1 2/3 pounds Fish (catfish, snapper, monk))

1 1/2 pounds Shrimp deveined, possibly shelled

1 bag Mussells/Scallops/Clams/Oysters

1 package Firm Dofu cubed

Bean Thread Noodles

Bok Choy, Nappa/Chinese Cabbage, Spinach

Snow peas

Asparagus, Sweet Potato

Water/Broth

Fresh ginger

Fresh Cilantro

Green Onions

Soy Sauce

Asian "BBQ" Sauce


Directions

1. Cilantro, green onions, soy sauce, and "BBQ" sauce are offered for individuals to make dipping sauce. 2. Other ingredients (except noodles, cabbage, dofu, snow peas) are cooked at the table in large hot pot seasoned with ginger. Host oversees the hot pot, monitoring cooking times, ensuring raw foods do not contaminate food to be immediately removed. Cooked foods are dipped in individuals' sauces. 3. Later in the meal, noodles, cabbage, dofu, and snow peas are added to the pot to create a noodle soup. These remaining hot pot contents, including broth, are dished into individuals' dipping bowls where they mix with remaining dipping sauce to create delicious, seasoned noodle soup.
