Ingredients

2 pounds beef (stew, chuck, short rib) cubed

6 cloves Garlic minced

1.5 Onions sliced

1.5 cups carrots chopped

1.5 cups Celery chopped

1/4 cup Butternut squash chopped

2 tablespoons Tomato paste

1 Roma Tomatoes chopped

1 Fresh rosemary

5 Bay leaf

salt pepper and cumin

16 ounce Beef broth

1/2 cup Dry red wine

6 ounce Mushrooms chopped

Directions

Pad dry the meat. Season meat with salt and pepper. In Insta Pot, saute the garlic and onions until soft. Add all ingredients except mushrooms. Cook on High pressure for 15 minutes. Let it naturally relieve pressure. Add the mushrooms.
