Jamaican Jerk Marinade

Ingredients

1 1/2 teaspoons Ground cinnamon

1 1/2 teaspoons Ground nutmeg

1 tablespoon Cayenne pepper

1 tablespoon Ground sage

1 tablespoon Black pepper

2 tablespoons Ground allspice

2 tablespoons Dried thyme

2 tablespoons Sugar

4 tablespoons Garlic powder

4 tablespoons Lime juice

1 1/2 cups Vinegar

1/2 cup olive oil

1/2 cup Soy sauce

1 cup Onion medium, diced

1 cup Orange juice

3 bunch Scallion

4 ea Jalapeno peppers


Directions

1. Cut scallions where the green and white parts meet. Put what part of scallions, jalapenos and onions in food processor. Process until finely chopped. 2. Chop green part of scallions roughly. 3. Combine dry spices. 4. Combine liquid ingredients. 5. Whisk liquid into spices. 6. Add scallions, onions and jalapenos. Mix

I made it exactly like the recipe and was afraid it would be too fiery hot. I cooked the chicken on the grill at 350 for 8 min ea side . It was juicy with just the right kick. Anyone can enjoy this!
