1 lg Red bell pepper cored, seeded and thinly sliced
1 sm Onion thinly sliced
1 tb fresh ginger root chopped, or
1 ts Ground ginger
1 cl Garlic, fresh crushed
1/8 ts Crushed hot red pepper
12 oz Fresh Chinese pea pods OR
1 lg head escarole Coarsely chopped
1 tb Soy sauce
1/2 firmly-packed ts Light brown sugar
